Sep. 29th, 2010 09:55 amThe nice thing about coming from a predominantly Brazilian family (displaced as we are in the Pacific NorthWest X3) is that the food is always good. I'm not anywhere near the skill level of my mother, but I made a salmon bake last night that turned out quite tasty. Mum actually said it was better than any of the salmon she's ever made, but I think she's just bored with her own food.
Ingredients:
1 boneless Salmon fillet
1 medium tomato or 2 small tomatoes, diced
1 bell pepper or a few small peppers, diced
1/4 to 1/3 cup green olives, slice 'em if you want to
1/4 cup olive oil
1 teaspoon lime juice (lemon juice works too)
1 tablespoon minced garlic
1 teaspoon salt
Preheat the oven to 350 degrees. Coat the salmon fillet in the olive oil, front and back, then put it in a glass baking pan. If the fillet still has skin on it, make sure the skin side is facing down! Spread the garlic on top of the fillet, then sprinkle the salt evenly across. Sprinkle the lemon juice too. Now take all the veggies and spread them across the fillet. Cover the whole tray in foil and bake for about 25 minutes, then take the foil off and bake for an additional 15 minutes for browning.
Voila, you're done! Serves 3 to 5 people depending on the hunger level XD
I like eating it with rice, but I'm sure it'd go well with an al dente pasta, too.
